Apps like Google Maps can know the real location of the device they are running on. They do this by recognizing your Wi-Fi router location. HOWEVER, all other information that passes through the app is protected and encrypted.
Websites you visit on your device's browser will not be able to identify your IP address so they would not know your real physical location.
